Ingredients:

· 250g – 300g minced grass-fed beef liver (if you can’t get minced liver, carefully mince/grind it at home in a suitable food processor)

· 250g minced beef

· 2 tbsp grass-fed butter

· 1 tsp paprika (optional)

· 1 tsp garlic powder (optional)

· Salt and pepper to taste

· 1 beaten free-range organic egg 

Method: 

· Combine all of your ingredients together into a bowl, other than the butter, and mix well

· Once everything is mixed in, shape your mixture into small meatballs, a little smaller than golf balls.

· Heat your butter over a medium heat in a frying pan, add the meatballs, and fry on both sides to get a nice crust.

· Place onto a baking tray and bake in a pre-heated oven at 180C for 18 – 20 minutes.

Carnivore Burgers

If you’re craving a juicy, tender, meaty burger, that’s actually good for you, rather than packed full of the junk you get in takeaways and fast-food restaurants, this carnivore burger recipe is ideal.

Ingredients: 

· 250g minced grass-fed beef liver

· 300g minced grass-fed beef with a high fat content (ribeye works well)

· Salt and pepper

· 1 tsp cayenne pepper (optional)

· 1 tsp garlic powder (optional)

· 1 tsp ground coriander (optional)

· 1 beaten free-range organic egg

· 2 tbsp grass-fed butter

Method: 

· In a bowl, combine all of your ingredients together, other than the butter.

· Give everything a good mix and then shape into burgers. You can decide how thick or how thin you want your burgers to be.

· Melt the butter in a frying pan, add your burger patties, season lightly, and fry on either side to form a thick crust.

· Cook to the burgers to your preference, remove from the heat, and enjoy.

Liver and Onions

Up next, we have a British classic. Yep, it’s liver and onions.

Though this is not technically a 100% keto/carnivore approved recipe, it’s still very low in carbs and sugars. The slight sweetness from the onions lends itself perfectly to the gamey, meatiness of the liver.

Ingredients: 

· 1 grass-fed beef liver per serving

· 1 cup of organic whole milk

· 1 medium onion thinly sliced

· 2 tbsp grass-fed butter

· Salt and pepper

· Splash of Worcestershire sauce (optional)

Method: 

· One hour before cooking, pour the milk into a bowl, and place your liver/livers into the milk and leave to soak for one hour. This helps tenderise the liver and takes away the bitter edge.

· Remove the liver/livers from the milk and pat dry with some kitchen roll.

· Melt the butter over a medium heat and fry your onions until they begin to soften and go slightly brown at the edges.

· Next, slice your liver into thin slices and add to the pan with the onions. Turn up the heat slightly.

· Season the mixture in the pan, add the optional Worcestershire sauce if you’re using it, and fry for around 2 minutes each side. Don’t overcook the liver, otherwise it’ll become tough and rubbery, and nobody wants that.

· Remove from the heat, add to a plate or bowl, and enjoy.

Beef Liver and Thyme Pate

Liver is a food that was made for pate. It lends itself to the taste and texture of pate perfectly.

This pate is smooth, rich, aromatic, and packed full of energy.

Ingredients: 

· 250g grass-fed beef liver

· Salt and pepper

· 2 sprigs of thyme

· 1 tbsp grass-fed butter

· 2 tbsp grass-fed cream

· Half a small diced onion

· 1 garlic clove finely diced

Method: 

· Melt the butter in a frying pan, and lightly fry the onions until soft. Now, over a medium heat, add the garlic and fry for a further 30 seconds. Strip the leaves from the thyme sprigs, and add those at the end of this process.

· slice the liver into thin strips, add to the pan with the onion, garlic, and thyme, and fry the liver over a medium heat for roughly 90 seconds on either side.

· Allow to cool, season the mixture, then add to a food processor with the cream, and blend until it has a smooth consistency. If you like it more rustic, reduce the amount of blending time.

· Place into clean, dry, and sterile mason jars, store in the fridge, and enjoy.

Spicy Lamb and Grass-Fed Beef Liver Kebabs

If you like spicy food, this kebab recipe is for you.

Made with a combination of lamb and beef liver, these kebabs are aromatic, fragrant, very low in carbs, and can be as spicy or as mild as you can handle.

Ingredients: 

· 400g minced grass-fed beef liver

· 400g minced lamb meat

· 1 tsp minced garlic

· 1 tsp minced ginger

· 2 finely minced green or red chillies (use red if you want a fruitier flavour. You can also add more or less chilli, or use hotter varieties, depending on how spicy you want it)

· 1 tbsp chopped coriander leaves and stalks

· ½ tsp ground cumin

· 1 tsp ground coriander

· 1 tsp smoked paprika

· 1 tsp hot chilli powder

· 1 tsp turmeric powder

· 1 tsp garam masala powder

· 1 tsp methi leaves (ground fenugreek leaves)

· Salt and pepper

· 2 tbsp melted grass-fed ghee or butter

Method: 

· Place all of your ingredients together into a large mixing bowl, and mix until everything is well combined.

· Now, take your kebab skewers (if using wooden ones, soak in water for one hour before use) and carefully form the meat around the skewers so that it looks almost like a sausage. Make sure it’s well compact and won’t fall off the skewers during cooking.

· Place the kebabs onto a baking tray, and place under a hot grill, grilling on both sides until cooked through. You want a little charring on the outside, but be sure not to burn your kebabs.

· Remove from the grill, sprinkle with a few remaining coriander leaves, and enjoy.
